Hey Tim, not much baking lately. Been thinking about trying naturally leavened panettone but I'll need to grow a pair first (lol).
I haven't either forty winks. The girlfriends on a diet, so I am too by default. That panettone sounds delicious though.
Teaching my older brother how to make sourdough last night. Here's the results. Such an easy bread to make,and so darn tasty.
This weeks loaf is a 40% whole wheat. I also added 2 tablespoons of Flax-Chia-Hemp seed blend to the dough. The taste is very earthy, definitely a keeper.
Tonight's bread is 10% buckwheat,30% whole wheat and 60% white. 75% hydration. The buckwheat gives it a clean flavor that reminds me of rice krispies. It also caused a little less oven spring as it doesn't contain gluten.
