  5. That's my second favorite @SitnSpin. French toast and bread pudding just doesn't taste the same with rye.

  13. Hey Tim, not much baking lately. Been thinking about trying naturally leavened panettone but I'll need to grow a pair first (lol).

  14. I haven't either forty winks. The girlfriends on a diet, so I am too by default. That panettone sounds delicious though.

  16. This weeks loaf is a 40% whole wheat. I also added 2 tablespoons of Flax-Chia-Hemp seed blend to the dough. The taste is very earthy, definitely a keeper. 20210301_173043.jpg 20210301_192352.jpg

Tonight's bread is 10% buckwheat,30% whole wheat and 60% white. 75% hydration. The buckwheat gives it a clean flavor that reminds me of rice krispies. It also caused a little less oven spring as it doesn't contain gluten. 20210303_162527.jpg 20210303_202114.jpg

  18. Today's loaf is a Bauernbrot or farmers bread. It's a hearty rye bread. One of my favorites. 20210309_172341.jpg 20210309_184420.jpg
