Tomorrow, New Years Day, I'll be making Tuscan Bean Stew with pancetta and veggies. I'll take some pictures and share the recipe with all of you. Earlier today I sorted and rinsed one pound of dry Great White Northern beans to do an overnight soak. I added 3T of sea salt to the soak water, which means the beans will have the perfect bite without having to be pressure canned first. (We have what's considered 'really hard water' here and that affects the outcome of using dried beans vs. canned beans, thus the salt water soak.)

Some homemade farfalle I served with blitzed peas & spring onions in a stock and pecorino with prosciutto. I’ll try look back for more photos.
